Recipe of the Month Desserts - Paradise Pudding



INGREDIENTS
  • 2 cups cold milk
  • 1 (3.4-ounce) package instant French vanilla pudding mix
  • 1/4 teaspoon coconut extract
  • 16 vanilla wafers, divided
  • 1 medium firm banana, sliced
  • 4 tablespoons chopped walnuts
  • 1 cup sliced strawberries
  • 3/4 cup halved green seedless grapes
  • 2 tablespoons flaked coconut, toasted

INSTRUCTIONS
In a bowl, whisk milk and pudding; mix for two minutes. Add extract and whisk; allow mixture to “rest” for five minutes. Coarsely crush 12 vanilla wafers; set aside.
In a dessert bowl or punch bowl, layer banana slices, half the wafer crumbs, half the walnuts, half the pudding, and all of the strawberries. Repeat with the remaining wafer crumbs and pudding, all of the grapes, and remaining walnuts.
Crush the remaining wafers and garnish dessert with those crumbs and toasted coconut. Refrigerate.
