INGREDIENTS |
- 1 pound pinto beans

3 pounds pork roast

7 cups water

1/2 cup onion, chopped

2 cloves garlic, minced

1 tablespoon salt

2 tablespoons chili powder

1 tablespoon cumin
-
1 teaspoon oregano
-
1 (4-ounce) can green chiles, chopped

INSTRUCTIONS |
Put all ingredients in a dutch oven, crock pot, or heavy kettle. Cover and simmer for about five hours or until roast falls apart and beans are tender. Uncover and cook about half an hour or until desired thickness. Serve with corn chips and choice of chopped tomatoes, avocado, onion, shredded lettuce, grated cheese, or taco sauce. |
