Fruits and Vegetables - Asparagus Cheese Strata



INGREDIENTS
  • 1 1/2 pounds fresh asparagus,cut into 2-inch pieces
  • 3 tablespoons butter or margarine, melted
  • 14 slices bread, with crusts removed
  • 3/4 cup shredded cheese
  • 3 cups milk
  • 2 cups cubed ham or crumbled bacon
  • 6 eggs
  • 2 teaspoons onion
  • 1/2 teaspoon salt
  • 1/2 teaspoon dry mustard

INSTRUCTIONS
Cook asparagus; drain. Butter one side of bread slices and place a layer in a 9-x-13-inch buttered baking dish. Sprinkle half of cheese over bread; layer asparagus and cubed ham. Cover with remaining bread, buttered side up.
Beat eggs; add milk, onion, salt, and dry mustard. Beat well and pour over casserole; cover and refrigerate overnight. Remove 15 minutes before baking. Heat oven to 325° and bake, uncovered, for 45 to 50 minutes or until liquid is set. Remove from oven and sprinkle with remaining cheese. Return to oven for 10 minutes or until cheese melts.
Yield: 10 to 12 servings.
