Fruits and Vegetables -
Green Tomato Pickles

INGREDIENTS |
- 2 gallons sliced green tomatoes (or very small whole green tomatoes)

3 large white onions, sliced

2 red bell peppers, sliced

1 green bell pepper, sliced

1/4 cup salt

4 cups sugar
-
2 tablespoons mustard seed

1 1/2 teaspoons turmeric

1 red hot pepper, chopped

3 cups apple cider vinegar

INSTRUCTIONS |
Place tomatoes, onion, and peppers in a large bowl. Add salt and mix well. Cover with ice; allow mixture to stand for two hours. Drain. In a large pot, combine all other ingredients. Add vegetables. Bring to a slow boil. Fill hot jars and seal. Yield: Six to eight pints. |
