Rice and Pasta - Spinach and Rice Casserole



INGREDIENTS
  • 2 cups fresh spinach
  • 4 tablespoons butter or margarine
  • 1 medium onion, chopped
  • 1 1/2 cups white rice, cooked
  • 1/4 pound processed cheese
  • Salt to taste

INSTRUCTIONS
Cook fresh spinach until tender. Chop spinach with fork and drain most of the liquid. Place spinach in saucepan and add butter and onion. On medium heat, cook until hot. Add cooked rice and cheese to the spinach mixture. Reduce heat and simmer until cheese has melted. Stir occasionally. Place in slightly greased 8-by-11-inch baking dish. Bake at 350° F. for 30 minutes or until bubbly.
