Pollo Pot Pie Casserole

INGREDIENTS |
- 6 boneless, skinless chicken breasts

3 stalks celery, chopped

1 onion, chopped

3 carrots, chopped

1 teaspoon salt

1 teaspoon pepper
-
1 can cream of chicken soup
-
1 can cream of mushroom soup
-
1 cup sour cream
-
1 cup water or chicken stock
-
1 can corn, drained
-
1 can peas, drained
-
1 can mushrooms, drained
-
1 teaspoon hot sauce
-
1 teaspoon paprika
-
2-3 cups crumbled Ritz or Townhouse crackers

1 stick butter, melted
-
1 cup shredded Cheddar cheese

INSTRUCTIONS |
In a large pot, stew first six ingredients in 2 quarts of water for about 30 minutes; drain, allow to cool to touch, and then shred chicken. Place ingredients in a 9-x-13-inch baking dish. Combine next nine ingredients and pour over chicken mixture. Top with cracker crumbs; drizzle melted butter over top. Bake at 350ยบ for 25 minutes. Remove from oven and sprinkle cheese over top; bake another five minutes. |
