Breads, Rolls, and Muffins - French Breakfast Puffs



INGREDIENTS
  • 1/2 cup sugar
  • 1/2 cup shortening
  • 1 egg
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup milk
  • 1/2 cup sugar
  • 1 teaspoon ground cinnamon
  • 6 tablespoons butter or margarine, melted

INSTRUCTIONS
In a mixing bowl, cream together 1/2 cup sugar, shortening, and egg. Combine flour, baking powder, salt, and nutmeg; stir thoroughly. Add flour mixture to creamed mixture alternately with milk, beating well after each addition.
Fill 12 greased 2 1/2-inch muffin cups two-thirds full with batter. Bake at 350° for 20 minutes or until done. Combine remaining 1/2 cup sugar and cinnamon. Remove muffins from oven; immediately dip tops in melted butter, then in sugar-cinnamon mixture until coated. Serve warm.
Yield: 12 muffins.
