Sweet Potato Souffle

INGREDIENTS |
- 3 cups cooked and mashed sweet potatoes

1 cup sugar

1/2 cup milk

1/3 cup butter or margarine

2 eggs

1 teaspoon vanilla

Topping:
-
1 cup coconut
-
1 cup pecans, chopped

1 cup brown sugar

1/3 cup flour
-
1/3 cup butter, melted

INSTRUCTIONS |
Combine potatoes, sugar, milk, and 1/3 cup butter; pour into buttered baking dish. Combine topping ingredients and spread over potatoes. Bake at 350° for about 30 minutes. Yield: Six to eight servings. |
