Marinated Cucumber & Pepper Salad

INGREDIENTS |
- 2 pounds cucumbers

5 green peppers
-
2 teaspoons salt
-
1 teaspoon pepper or pepper to taste

2 tablespoons lemon juice

1/4 cup olive oil

2 hard-boiled eggs

INSTRUCTIONS |
Peel cucumbers; remove seeds. Cut into very thin slices; season with salt. Place in a colander over a bowl in the refrigerator; drain for 12 hours. Press out all remaining water from cucumbers and gently pat dry with paper towel. Slice green peppers and add to cucumber slices in a bowl. Add lemon juice and olive oil; allow vegetables to marinate for two hours. To serve, place on a platter and garnish with quartered eggs. |
