Sauces and Marinades - Marinated Carrots



INGREDIENTS
  • 2 pounds carrots
  • 1 large onion, chopped
  • 1 large green pepper, chopped
  • 1 cup sugar
  • 3/4 cup vinegar
  • 2 tablespoons Worcestershire sauce
  • 1 can tomato soup
  • 1/2 teaspoon dry mustard
  • 1/4 cup salad oil
  • Salt and pepper to taste

INSTRUCTIONS
Scrape, wash, and slice carrots. Cook until tender; drain well. Add chopped onion and green pepper to cooked carrots in a large bowl. Mix together all the remaining ingredients and pour over carrots.
Cover tightly; chill several hours or overnight. Serve with slotted spoon.
