Herbed Oven Potatoes

INGREDIENTS |
- 1/2 cup olive or vegetable oil

1/4 cup butter or margarine, melted

1 small onion, finely chopped

1 teaspoon fresh thyme, minced

1 teaspoon fresh marjoram, minced

1/4 teaspoon pepper

2 pounds red potatoes, quartered

1 teaspoon fresh parsley, minced

INSTRUCTIONS |
In a shallow bowl, combine the first six ingredients. Add potatoes a few at a time; toss to coat. Place in a single layer in a greased 15-x-10-x-1-inch baking pan. Drizzle with remaining oil mixture. Bake, uncovered, at 450° for 50 to 55 minutes or until tender. Sprinkle with parsley. |
