Meats & Seafood - Corned Beef and Cabbage Quiche



INGREDIENTS
  • 1 (9-inch) unbaked pie crust
  • 1/2 cup chopped onion
  • 3 1/2 cups green cabbage
  • 2 packages corned beef, finely chopped
  • 1/3 cup shredded Cheddar cheese
  • 3 eggs
  • 1 can evaporated milk
  • 1/8 teaspoon black pepper

INSTRUCTIONS
Preheat oven to 350°. In a large skillet coated with butter-flavored cooking spray, sauté onion until tender. Add cabbage and corned beef. Mix well. Cook for about 10 minutes or until cabbage is tender.
Evenly spread vegetable mixture in bottom of unbaked pie crust. Sprinkle cheese over top. In a medium bowl, beat eggs with a fork. Add evaporated milk and black pepper; mix well. Pour egg mixture over cheese. Bake for 35 to 40 minutes or until golden brown. Place quiche on a wire rack and allow it to set for five minutes.
