Pumpkin Chip Muffins

INGREDIENTS |
- 4 eggs

2 cups sugar

1 (16-ounce) can pumpkin

1 1/2 cups oil

3 cups flour

2 teaspoons baking soda

2 teaspoons baking powder
-
1 1/2 teaspoons ground cinnamon

1 teaspoon salt

2 cups (12 ounces) semisweet chocolate chips

INSTRUCTIONS |
Beat eggs, sugar, pumpkin, and oil until smooth. Combine flour, soda, baking powder, salt, and cinnamon. Add to pumpkin mixture; mix well. Fold in chocolate chips. Fill greased muffin cups about three-fourths full. Bake at 400° for 16 to 20 minutes or until done. Cool in pan for 10 minutes. Remove and serve. Yield: 24 muffins. |
