Rice and Pasta -
Tricolor Pasta Salad

INGREDIENTS |
- 1 (16-ounce) package tricolor spiral pasta

1 (16-ounce) package frozen California-blend vegetables (broccoli, cauliflower, carrots)

1 (2 1/4-ounce) can sliced ripe olives, drained

1 to 1 1/3 cups Italian salad dressing

1/4 teaspoon garlic salt, optional

INSTRUCTIONS |
Cook pasta according to package directions. Meanwhile, microwave frozen vegetables, covered, at 50-percent power for seven to eight minutes; drain. Drain pasta and rinse in ice-cold water; drain thoroughly. In a bowl, combine pasta, vegetables, and olives. Mix dressing and garlic salt; pour over salad and toss. Refrigerate leftovers (if there are any!) Note: This is a great side dish to serve with any grilled meat or fish. Easy to double for a larger crowd. |
