Blueberry-Peach Crisp

INGREDIENTS |
- 3 cups fresh peaches, peeled and sliced, or frozen unsweetened peach slices

2 cups fresh or frozen unsweetened blueberries

1/2 cup granulated sugar

1/3 cup rolled oats

1/3 cup all-purpose flour

1/4 cup brown sugar, packed

1/2 teaspoon ground coriander

3 tablespoons butter

Vanilla ice cream (optional)

INSTRUCTIONS |
Thaw fruit if possible; do not drain. Transfer fruit to an ungreased two-quart, square glass baking dish. Stir in granulated sugar; set aside. In a medium mixing bowl, stir together oats, flour, brown sugar, and coriander. Using a pastry blender, cut in butter until mixture resembles coarse crumbles. Sprinkle over fruit. Bake at 375° for 30 to 40 minutes or until topping is golden. If desired, serve warm with ice cream. |
