Breads, Rolls, and Muffins - Blueberry Bread



INGREDIENTS
  • 2 eggs
  • 1 cup sugar
  • 1 cup milk
  • 3 tablespoons canola oil or vegetable oil
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 4 teaspoons baking powder
  • 1 cup fresh blueberries
  • 1/2 cup chopped walnuts or pecans

INSTRUCTIONS
Mix eggs and sugar. Add milk and oil. Sift together flour, salt, and baking powder. Combine mixtures and stir just until blended.
Fold in blueberries and nuts. Pour into a greased 5-x-9-inch loaf pan. Bake at 350° for 50 to 60 minutes. Cool in pan.
