Cakes and Pies - Peppermint Buttercream Frosting



INGREDIENTS
  • 8 tablespoons (1 stick) butter, at room temperature
  • 1/2 cup finely crushed peppermint candy
  • 3 cups powdered sugar, sifted
  • 2 to 3 tablespoons milk
  • 1/2 teaspoon peppermint extract

INSTRUCTIONS
Place butter in a large mixing bowl. Blend with an electric mixer on low speed for about 30 seconds until fluffy.
Stop the mixer and add peppermint candy, sugar, 2 tablespoons milk, and peppermint extract. Blend with mixer on low speed until the sugar is well mixed, about one minute.
Increase the speed to medium and beat until frosting is fluffy, about one minute more. Blend in up to 1 more tablespoon milk if frosting is too stiff. Spread frosting on a two-layer cake.
