Poultry and Eggs -
Pineapple Chicken Stir Fry

INGREDIENTS |
- 2 tablespoons sugar

1 tablespoon vinegar

1 tablespoon ketchup
-
1/4 cup soy sauce
-
2 cloves garlic, minced

1/2 teaspoon ginger
-
1 pound boneless, skinless chicken breast

1 (16-ounce) package frozen stir fry vegetables

1 (8-ounce) can pineapple chunks, drained

2 tablespoons vegetable oil

Hot cooked rice

INSTRUCTIONS |
Mix first six ingredients and set aside. Cut chicken into strips and stir-fry in oil for five to six minutes. Add vegetables and stir-fry until tender. Stir in pineapple chunks. Add soy sauce mixture and heat thoroughly. Serve over hot rice. |
