Apple Pecan Pancakes with Apple Spice Syrup

INGREDIENTS |
- Pancakes:

1 cup all-purpose flour

2 tablespoons brown sugar

2 teaspoons baking powder

1/2 teaspoon salt

1/2 teaspoon ground cinnamon

3/4 cup plus 2 tablespoons milk

2 eggs, separated
-
1 teaspoon vanilla extract

1/2 cup apple, peeled, cored, and finely chopped

Syrup:
-
1/4 cup brown sugar, packed
-
2 tablespoons cornstarch
-
1/4 teaspoon ground allspice
-
1/8 teaspoon ground nutmeg

1 3/4 cups apple juice or cider

INSTRUCTIONS |
In a bowl, combine flour, 2 tablespoons brown sugar, baking powder, salt, and cinnamon. Stir in milk, egg yolks, and vanilla. Add apple and pecans. Beat egg whites until stiff peaks form; fold into batter.
Pour patter 1/4 cup at a time onto a hot, greased griddle or skillet. Turn when bubbles begin to form and the edges are golden. Cook until second side is golden.
To make syrup, combine 1/4 cup brown sugar, cornstarch, allspice, and nutmeg in a saucepan. Mix well. Add juice or cider. Cook and stir over medium heat until syrup is bubbly and slightly thickened. Serve warm over pancakes. Yields 12 pancakes and 1 3/4 cups syrup. |
