Vidalia Onion Relish

INGREDIENTS |
- 2 pounds large Vidalia onions (about 4), coarsely chopped

2 ribs celery, sliced

1 red bell pepper, seeded and chopped

1 tablespoon butter or margarine

1/2 cup cider vinegar

2 tablespoons brown sugar, firmly packed
-
1 teaspoon mustard seed
-
1/4 teaspoon celery seed
-
1/4 teaspoon salt
-
1/2 cup water

INSTRUCTIONS |
In a medium saucepan, sauté the first three ingredients until soft but not brown. Add remaining ingredients and mix well. Heat to boiling; reduce heat and simmer uncovered for 20 minutes. Serve at room temperature or place in jars, cover, and refrigerate. Yield: Four cups. Note: This recipe can also be made in a large electric skillet. |
