Change of Pace Pizza

INGREDIENTS |
- 1 prepared pizza crust

2 small cans mushroom pieces, drained and chopped

1 package frozen chopped spinach, thawed and drained

2 small jars artichokes, drained and chopped

1 small jar chopped pimiento, drained, or 1/2 cup roasted red peppers

1 cup low-fat mayonnaise

1 tablespoon Dijon mustard

1 teaspoon garlic, chopped

1 tablespoon Parmesan cheese

2 cups mozzarella cheese, shredded

INSTRUCTIONS |
Mix mayonnaise, mustard, garlic, and Parmesan cheese. Spread over prepared pizza crust. Layer vegetables on crust, sprinkle with mozzarella cheese, and bake at 450° for 15 minutes or until cheese begins to bubble and brown. |
