Cakes and Pies - Spiced Chocolate Honey Prune Cake



INGREDIENTS
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons double-acting baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon ginger
  • 1 teaspoon cinnamon
  • 1/4 teaspoon cloves
  • 1/3 cup butter or margarine
  • 1/2 cup sugar
  • 1 ounce unsweetened chocolate
  • 2 eggs
  • 1/2 cup milk
  • 1/2 cup honey
  • 1 cup prunes, lightly sweetened, drained, and pureed (Canned pureed prunes will not work because there is too much liquid)
  • 1/2 teaspoon vanilla
  • Icing:
  • 2 cups powdered sugar
  • 1/4 cup butter or margarine
  • 1 egg
  • 1 teaspoon vanilla

INSTRUCTIONS
Sift all dry ingredients together, set aside. Cream butter; gradually add sugar to butter and cream until light.
Melt chocolate and when cool add to butter mixture. Beat eggs and add to butter mixture. Combine flour mixture with butter mixture, and then mix in milk and honey. Stir batter until smooth, add prunes and vanilla, mix.
Bake in a greased pan about 25 minutes. When cool spread entire cake with icing.
To make icing, mix sugar and butter until creamy, then beat in egg and vanilla. Place the mixture over (not in) boiling water for approximately 15 minutes. Spread icing on cake and enjoy.
