Apple and Raisin Turnovers

INGREDIENTS |
- 2 tablespoons dark brown sugar, packed

2 teaspoons ground cinnamon

1/4 teaspoon ground nutmeg

4 large Golden Delicious apples, cored and sliced

1/2 cup raisins

2 teaspoons vanilla flavoring

8 (17-x-11-inch) sheets frozen phyllo dough, thawed

INSTRUCTIONS |
Preheat oven to 375°. Coat a baking sheet with nonstick cooking spray. In a large saucepan, combine brown sugar, cinnamon, and nutmeg. Add apples and raisins. Toss to mix. Cook over low heat for about five minutes, or until sugar is dissolved and apples can be easily pierced with a fork. Stir in vanilla and cool. On a work surface, lay one sheet of phyllo dough with the narrow end toward you and coat lightly with nonstick spray. Cover the remaining sheets. Fold the single sheet lengthwise into thirds. Coat lightly with nonstick spray again. Spoon 1/4 cup of the apple-raisin mixture about two inches from bottom of strip. Fold up a two-inch flap from bottom of strip to cover filling. Fold the lower left-hand corner diagonally to the right side as if you were folding a flag. Continue folding diagonally until you reach the end of the sheet. Place turnover, seam side down, onto prepared baking sheet. Coat lightly with nonstick spray. Repeat process to make the other seven turnovers. Bake for eight to 10 minutes or until golden brown. Allow turnovers to cool slightly. Serve warm with a dollop of low-fat vanilla ice cream or fat-free frozen yogurt. Yield: Eight servings.
