Recipe of the Month Cakes and Pies - Caramel Apple Poke Cake



INGREDIENTS
  • 1 box yellow or vanilla cake mix
  • 1 tsp. apple pie spice or cinnamon
  • 1/3 cup vegetable oil
  • 3 eggs, beaten
  • 2 tsps. vanilla
  • 1 (20 oz.) can apple pie filling (coarsely chop the apples)
  • 1 can sweetened condensed milk
  • 1 cup caramel sauce
  • 1 (8 oz.) tub Cool Whip
  • 1 cup toffee bits or butterscotch chips

INSTRUCTIONS
Preheat oven to 350°. Grease a 9-x-13-inch pan. In a large bowl, beat cake mix, apple pie spice (or cinnamon), water, oil, eggs and vanilla for two minutes with a mixer. Fold in apple pie filling and pour into prepared pan. Bake for 25 to 35 minutes until done. Cool slightly and poke holes every inch or so. Pour sweetened condensed milk and caramel sauce over the cake (especially into the holes). Cool completely and frost with Cool Whip. Sprinkle toffee bits or butterscotch chips on top.
