Cookie Ice Cream Sandwiches

| INGREDIENTS |
- Peanut butter
-
12 oatmeal raisin cookies
-
1 pint vanilla ice cream (or flavor of choice)

Miniature chocolate chips
|
| INSTRUCTIONS |
Spread peanut butter over the bottom of six cookies. Place a scoop of ice cream on peanut butter. Top with another cookie, bottom side down. Press down gently. Roll sides of ice cream sandwich in chocolate chips. Wrap in plastic wrap and freeze until serving.
Yield: Six servings. |
