Sweet and Sour Pork

INGREDIENTS |
- 1 tablespoon oil

¾ pound trimmed boneless, pork loin cut into cubes

1 cup green and red pepper strips

¼ cup reduced sodium soy sauce

3 tablespoons brown sugar

3 tablespoons vinegar
-
1 tablespoon cornstarch
-
½ teaspoon garlic powder
-
½ teaspoon ground ginger
-
1 (8-ounce) can pineapple chunks in juice
-
1½ cups rice

INSTRUCTIONS |
Heat oil in large skillet on medium-high heat. Add pork to skillet, and stir fry until well browned. Add peppers, stir fry 1 to 2 minutes. Mix soy sauce, brown sugar, vinegar, cornstarch, garlic powder, ginger, and pineapple chunks in juice; add to skillet. Bring to a boil. Meanwhile, prepare rice as directed on package. Serve pork mixture over rice. |
