Desserts - Quick Blackberry Cobbler



INGREDIENTS
  • 1 stick butter
  • 21/2 cups plain flour
  • 3 cups sugar
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 11/2 cups water
  • 11/2 teaspoons vanilla
  • 2 quarts blackberries, fresh or frozen
  • 11/2 tablespoons lemon juice

INSTRUCTIONS
Melt butter in deep 11x14-inch pan or an aluminum lasagna pan; let cool.
Combine 2 cups flour, 2 cups sugar, baking powder, and salt; add water and vanilla. Pour half of batter on top of butter. In another bowl, pour lemon juice over berries. Mix together the 1 cup sugar and 1/2 cup flour. Pour over berries and mix gently, then pour berries over batter. Pour the rest of the batter over berries. Do not stir. Scrape the berry bowl of the sugar mixture and sprinkle over batter; this will make it a little crispy when baked.
Bake at 350ยบ for 1 hour to 1 hour and 15 minutes or until golden brown and not jiggling in center.
Note: You can cut recipe in half for a 9x9-inch bowl. You can also make this a peach cobbler, though I would exchange almond flavoring for the vanilla flavoring.
