Breads, Rolls, and Muffins -
Banana-Nut Bread

INGREDIENTS |
- 3/4 cup butter, softened

1 (8 ounce) package cream cheese, softened

2 cups sugar

2 large eggs
-
3 cups all-purpose flour

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

11/2 cups mashed bananas (about 4 medium, ripe, almost black or very speckled)

1 cup chopped pecans
-
1/2 teaspoon vanilla extract

INSTRUCTIONS |
Beat butter and cream cheese with mixer until creamy. Gradually add sugar, beating until fluffy. Add eggs; beat until blended. Combine flour and next three ingredients. Gradually add to butter mixture, beating at low-speed until well blended. Stir in bananas, pecans, and vanilla. Spoon batter into two greased and floured 8x4-inch loaf pans. Bake at 350ยบ for 1 hour or until done. Cool bread in pan on wire rack 10 minutes before removing from pans. |
