Desserts - Old Fashioned Coconut Cake



INGREDIENTS
  • 1/2 cup sugar
  • 4 cups sifted cake flour
  • 5 tablespoons baking
  • powder
  • 11/2 teaspoons salt
  • 1 cup vegetable shortening
  • 2 cups sugar
  • 2 cups milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 7-Minute Frosting:
  • 3 egg whites
  • 21/4 cups sugar
  • 2 teaspoons white corn syrup
  • 1/3 cup cold water
  • Dash of salt

INSTRUCTIONS
Beat 6 egg whites and 1/2 cup sugar until they will hold up in stiff peaks; set aside. Sift dry ingredients together; combine in mixer with the shortening. Gradually add the 2 cups sugar and beat until light and fluffy. Add flour and milk alternately, then the vanilla and almond and fold in the egg whites already beaten with the sugar; mix and pour in greased and floured 9-inch pans. Bake 20 to 25 minutes on 375ยบ. Cool before frosting with the following white frosting:
7-Minute Frosting:
Beat 1 minute. Put in double boiler and place over boiling water. Beat and cook for about 7 minutes or until thick enough to spread over cake. Use fresh or frozen grated coconut and spread the icing between each layer and on top.
Finish by covering the whole outside of the cake with frosting and sprinkle the top and sides with coconut.
