Breads, Rolls, and Muffins - Zucchini Oatmeal Muffins



INGREDIENTS
  • 21/2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 cup chopped nuts
  • 1/2 cup uncooked oats
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 4 eggs
  • 2 cups shredded zucchini
  • 1/2 cup oil

INSTRUCTIONS
Mix dry ingredients in a large bowl. Beat the eggs and add to the dry mixture, along with the zucchini and oil. Blend well. Pour into prepared muffin tins and bake in a preheated 400ยบ oven for 20 to 25 minutes. Makes 2 dozen muffins. These muffins freeze well.
