Breads, Rolls, and Muffins -
Zucchini Oatmeal Muffins

INGREDIENTS |
- 21/2 cups all-purpose flour

1/2 cup sugar

1 cup chopped nuts

1/2 cup uncooked oats

1 tablespoon baking powder
-
1 teaspoon salt
-
1 teaspoon ground cinnamon

4 eggs
-
2 cups shredded zucchini
-
1/2 cup oil

INSTRUCTIONS |
Mix dry ingredients in a large bowl. Beat the eggs and add to the dry mixture, along with the zucchini and oil. Blend well. Pour into prepared muffin tins and bake in a preheated 400ยบ oven for 20 to 25 minutes. Makes 2 dozen muffins. These muffins freeze well. |
