Apple Cupcakes

| INGREDIENTS |
- 1 box white cake mix

1 cup apple juice, from frozen concentrate (reserve 11/2 tablespoons concentrate, undiluted for icing)

1/4 cup applesauce

1 apple, coarsely grated
-
1 egg
-
2 egg whites
-
Icing:
-
1 (8 ounce) package cream cheese, softened

11/2 tablespoons frozen apple juice concentrate, thawed

1 (16 ounce) package powdered sugar

| INSTRUCTIONS |
Combine cupcake ingredients until smooth; fill muffin cups. Bake at 350ยบ for 22 minutes, or until a toothpick comes out clean.
For icing, beat cream cheese and apple juice, than add powdered sugar and beat until smooth. Yield: 24 cupcakes. |
