Cherry Cupcakes

INGREDIENTS |
- Cupcake:

11/2 cups cake flour, sifted

1 teaspoon baking powder

1 teaspoon salt
-
11/2 cups sugar
-
1/2 cup shortening
-
3/4 cup milk
-
1/4 cup maraschino cherry juice
-
1 teaspoon vanilla
-
1/2 cup nuts chopped,
-
optional
-
4 egg whites, unbeaten
-
18 maraschino cherries, well drained and chopped
-
Icing:
-
1 box powdered sugar
-
2 tablespoons butter, melted
-
Enough whipping cream to spread

INSTRUCTIONS |
Cupcake: Sift flour, baking powder, salt, and sugar into mixing bowl. Drop in shortening, milk, and cherry juice. Then add vanilla and beat 2 minutes at low-speed by mixer. Add egg whites and beat 2 more minutes. Add nuts and cherry pieces. Icing: Mix well and place on top of cupcakes. You can also garnish the top of each cupcake with a long stem maraschino cherry, if desired. These are pretty and delicious. If you are making them for children you can omit the nuts. |
