Fruits and Vegetables - Marinated Tomatoes



INGREDIENTS
  • 4 to 6 large tomatoes, each cut into 6 chunks
  • 2 cucumbers, sliced
  • 3 tablespoons chopped fresh parsley
  • 1 tablespoon sugar
  • 1 teaspoon seasoned salt
  • 1/2 teaspoon ground pepper
  • 3/4 teaspoon dried thyme (this is the “key”)
  • 3/4 cup vegetable oil
  • 1/2 cup red wine vinegar
  • 1 sweet onion, chopped

INSTRUCTIONS
Slice tomato chunks and place in a colander to drain. In a large bowl, combine all remaining ingredients except tomatoes and cucumbers; whisk well. Allow to stand for 10 minutes plus, stirring occasionally.
