Cranberry-Cashew Drop Cookies

INGREDIENTS |
- 1 cup butter, softened

1 cup packed brown sugar

1/2 cup sugar

2 eggs

1 teaspoon vanilla extract

21/4 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon salt
-
1 cup chopped cashews
-
1 cup dried cranberries
-
1 (10-ounce to 12-ounce) package white chocolate baking chips

INSTRUCTIONS |
In a large bowl, cream butter and sugars until light and fluffy. Beat in eggs and vanilla. Combine flour, baking soda, and salt; gradually add to creamed mixture and mix well. Stir in the cashews, cranberries, and chips. Drop by rounded tablespoonfuls 2 inches apart onto ungreased baking sheets. Bake at 350ยบ for nine to 11 minutes or until golden brown. Remove to wire racks to cool. Yield: 41/2 dozen. |
