Pumpkin Bundt Cake

INGREDIENTS |
- 2 cups canned pumpkin

11/4 cups vegetable oil

2 cups sugar

4 eggs

2 cups self-rising flour

1 teaspoon cinnamon

Dash baking soda

Cream Cheese Icing:
-
1 pound powdered sugar
-
1 (8-ounce) package cream cheese, room temperature

1/2 stick butter, softened
-
1 teaspoon vanilla

1/2 cup chopped pecans

INSTRUCTIONS |
Preheat oven to 350ยบ. Spray Bundt pan with cooking oil. In a mixing bowl, combine all ingredients. With an electric mixer, blend until smooth. Pour in pan and bake 45 minutes. Remove from oven; cool 20 minutes. Remove from pan; cool completely. Cream Cheese Icing: In a mixing bowl, sift powdered sugar; add cream cheese, butter, and vanilla. Beat until smooth and creamy. Stir in pecans. Spread over cooled cake. Note: Cake can also be baked in sheet cake pan for 20-25 minutes. |
