Breads, Rolls, and Muffins - Apple-Raisin Muffins



INGREDIENTS
  • 2 apples, peeled and grated
  • 2 sticks butter
  • 2 cups raisins
  • 1 cup water
  • 2 teaspoons cinnamon
  • 2 teaspoons nutmeg
  • 1/2 teaspoon cloves
  • 2 cups sugar
  • 31/2 cups all-purpose flour
  • 2 teaspoons baking soda

INSTRUCTIONS
Cook together apples, butter, raisins, water, spices and sugar for 15 minutes; cool.
Mix flour with baking soda. Add to cooled apple mixture. Place paper liners in a mini muffin pan or coat with cooking spray. Bake at 350° for 15 minutes.
Yield: 48 mini muffins.
