Grandson’s Favorite Peanut Butter and Jelly Cook

INGREDIENTS |
- ¼ cup brown sugar

½ cup butter or cholesterol-free margarine

2 egg whites

½ cup peanut butter

1¼ cups oat bran

1 cup unbleached all-purpose flour

½ teaspoon baking powder

½ teaspoon soda
-
1/3 cup pure unsweetened grape jelly

INSTRUCTIONS |
Cream together brown sugar, butter or margarine, egg whites, and peanut butter. Stir in oat bran, flour, baking powder, and soda. Roll into 1-inch balls. Make a thumbprint in the center of each cookie. Fill the indentation with a small amount of jelly. Bake at 350º for 12-15 minutes. Yield: 36 cookies. |
