Appetizers - Chicken Puffs



INGREDIENTS
  • 2 tablespoons butter
  • 1/4 cup water
  • 1/4 cup all-purpose flour
  • Dash of salt
  • 1 egg
  • 1/4 cup Swiss cheese, shredded
  • 2 cups cooked or canned chicken, finely chopped
  • 1/4 cup celery, finely chopped
  • 2 tablespoons pimiento, chopped
  • 2 tablespoons dry white wine
  • 1/4 cup mayonnaise
  • 1/4 teaspoon salt
  • Dash of pepper

INSTRUCTIONS
Melt butter in 1/4 cup boiling water. Add flour and a dash of salt; stir vigorously. Cook and stir until mixture forms a ball that doesn't separate. Remove from heat and cool slightly. Add egg and beat vigorously until smooth. Stir in cheese.
Drop dough by level teaspoonfuls onto greased baking sheet. Bake at 400°F for 20 minutes. Remove puffs from oven; cool and split.
Combine remaining ingredients and fill each puff with 2 teaspoons of chicken mixture.
