Honey Maple Pumpkin Cheesecake

INGREDIENTS |
- 11/4 cups graham cracker crumbs

1/4 cup sugar

1/4 cup margarine or butter, melted

3 (8-ounce) packages cream cheese, softened

1 (14-ounce) can sweetened condensed milk

1 (15-ounce) can pumpkin

3 eggs

1/4 cup maple syrup
-
1/4 cup honey
-
11/2 teaspoons ground cinnamon

1 teaspoon nutmeg

1/2 teaspoon salt

INSTRUCTIONS |
Preheat oven to 325ยบ. In a small mixing bowl, combine crumbs, sugar, and butter. Press firmly on bottom of 9-inch springform pan. In large mixing bowl, beat cream cheese until fluffy. Beat in milk until smooth. Add pumpkin, eggs, maple syrup, honey, cinnamon, nutmeg, and salt; mix well. Pour into pan. Bake for 11/4 hours. Cool one hour. Cover and chill four hours. Maple Honey Glaze: 3/4 cup honey 3/4 cup maple syrup 1 cup whipping cream 1/2 cup chopped pecans, optional In a medium saucepan, combine honey, cream, and maple syrup; bring to a boil. Boil rapidly 15 to 20 minutes until thick, stirring occasionally. Add pecans, if desired. Spoon over chilled cake. |
