Peanut Butter Pudding

INGREDIENTS |
- Crust:

1 cup flour

½ cup chopped nuts

½ cup melted butter

Filling:
-
3 cups milk, divided
-
¾ cup sugar
-
4 tablespoons cornstarch

½ teaspoon salt
-
2 tablespoons butter
-
1 teaspoon vanilla
-
3 egg yolks
-
Crumbs:
-
1 cup powdered sugar
-
½ cup creamy peanut butter
-
1 (8-ounce) container whipped cream

INSTRUCTIONS |
In a bowl, combine flour, nuts, and butter. Press into bottom of 9-x-13-inch pan and bake at 350ยบ for 15 minutes. Heat 2 cups of milk; add dry ingredients to 1 cup milk and beat. Add to heated milk and cook for two minutes. Remove from heat, add butter and vanilla, and stir in egg yolks. Let the pudding cool. In a bowl, combine powdered sugar and peanut butter. Mix together with a knife and fork. Put most of the crumbs on the crust, saving a few for topping. Place cooled pudding on crumbs; layer with whipped cream and sprinkle remaining crumbs as topping. |
