Recipe of the Month Fruits and Vegetables - Oprah’s Fruit Salad



INGREDIENTS
  • 1 (20-ounce) can pineapple chunks in juice (reserve juice and divide)
  • 1 small package instant vanilla or lemon pudding
  • 2 cups cold milk
  • 3 ripe bananas
  • 2 apples
  • 1 (15-ounce) can mandarin oranges, drained, or 2 navel oranges
  • Whipped cream and cinnamon-sugar for garnish

INSTRUCTIONS
Drain pineapple juice, dividing into 1/3 cup and 2/3 cup; set aside. Prepare the pudding using 2 cups milk and the 1/3 cup juice. Cover and chill.
Peel bananas and apples. Slice bananas and chop apples into bite-sized portions. Combine with mandarin oranges in a large bowl; toss with the remaining 2/3 cup of juice. Cover and chill.
To serve, spoon the fruit mixture into bowls and top with pudding. Garnish with whipped cream and cinnamon-sugar. Keep refrigerated.
The cooks say: You may use any fruits or berries and add flaked coconut or nuts if desired.
