Fruits and Vegetables - Spicy Cheese Bake



INGREDIENTS
  • 1 (24-ounce) jar chunky salsa
  • 2 cups whole kernel corn
  • 2 cups zucchini, thinly sliced
  • 1 tablespoon chili powder
  • 4 cups tortilla chips, crushed
  • 3 cups cottage cheese
  • 1 cup cheddar cheese, shredded

INSTRUCTIONS
Mix salsa, corn, zucchini, and chili powder. Layer one-third each of salsa, chips, and cottage cheese in a 13-x-9-inch baking dish. Repeat layers twice. Sprinkle top with cheddar cheese. Bake at 375° for 40 minutes. Yield: Eight servings.
