Sweet Potatoes Rolled in Coconut

INGREDIENTS |
- 4 large sweet potatoes

2/3 cup brown sugar

2 tablespoons orange juice
-
1 teaspoon vanilla flavoring

2 cups shredded sweetened coconut

Large marshmallows (1 per ball)

INSTRUCTIONS |
Cook and mash sweet potatoes. Add brown sugar, orange juice, and flavoring. When cool enough to handle, wrap potatoes around each marshmallow and roll in coconut. Place balls in a greased baking dish. Bake at 350° for 15 to 20 minutes or until the coconut is browned. |
