Breads, Rolls, and Muffins -
Molasses Bran Muffins

INGREDIENTS |
- 2 cups shredded whole-bran cereal

11/2 cups milk

1/4 cup unsulfured molasses

1/4 cup shortening
-
1 egg
-
11/2 cups all-purpose flour

1/2 cup sugar

11/2 teaspoons baking soda

1/2 teaspoon salt

1/2 cup raisins

INSTRUCTIONS |
Heat oven to 400º. Grease an 18-cup muffin pan or line with paper baking cups. In a medium bowl, combine cereal, milk, and molasses; mix well. Let stand one to two minutes until cereal is softened. Add shortening and egg; beat well. In a large bowl, combine flour, sugar, baking soda, and salt; mix well. Stir in raisins. Add cereal mixture all at once to flour mixture. Stir just until moistened; do not beat. Divide batter evenly into prepared muffin pan. Bake at 400º for 14 to 18 minutes or until center is firm. Immediately remove from pan. Serve warm. |
