Low Country Red Rice

INGREDIENTS |
- 4 strips bacon

1/2 cup chopped onion

1/2 cup chopped celery

1/2 cup chopped bell pepper

1 cup uncooked rice

11/2 cups chicken broth
-
2 tablespoons sugar
-
Salt and pepper to taste

1 (8-ounce) can tomato sauce

INSTRUCTIONS |
Fry and crumble bacon; reserve drippings. SauteĀ“onion, celery, and pepper in drippings. Add rice, chicken broth, sugar, salt, pepper, and tomato sauce. Bring to a boil; stir once with fork. Stir in bacon. Cover and cook on low heat for 30 minutes. |
