Rice and Pasta - Low Country Red Rice



INGREDIENTS
  • 4 strips bacon
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 1/2 cup chopped bell pepper
  • 1 cup uncooked rice
  • 11/2 cups chicken broth
  • 2 tablespoons sugar
  • Salt and pepper to taste
  • 1 (8-ounce) can tomato sauce

INSTRUCTIONS
Fry and crumble bacon; reserve drippings. SauteĀ“onion, celery, and pepper in drippings. Add rice, chicken broth, sugar, salt, pepper, and tomato sauce. Bring to a boil; stir once with fork. Stir in bacon. Cover and cook on low heat for 30 minutes.
