Zippy Baked Carrots

INGREDIENTS |
- 5 to 6 cups carrots, sliced 1/4-inch thick

6 slices Swiss cheese

1 small onion, minced

4 tablespoons butter or margarine

3 tablespoons all-purpose flour

1 teaspoon salt

1 teaspoon chili powder
-
2 cups milk
-
1 cup soft bread crumbs

2 tablespoons butter or margarine, melted

5 bacon strips, cooked and crumbled

INSTRUCTIONS |
On stovetop or in a microwave, blanch the carrots until crisp-tender. Layer half in a shallow 2-quart baking pan; cover with half of the cheese. Repeat layers.
Sauté onion in 4 tablespoons butter for two minutes; blend in flour and seasonings. Cook and stir for one minute. Add milk all at once; cook and stir until thickened. Pour over cheese.
Combine bread crumbs and 2 tablespoons butter. Sprinkle over all. Top with bacon. Bake at 350° for 25 minutes.
Yield: eight servings. |
