Breads, Rolls, and Muffins -
Whole-Wheat Carrot Muffins

INGREDIENTS |
- 2 cups whole-wheat flour

1 cup granulated sugar

2 teaspoons baking soda

1 tablespoon cinnamon

1 teaspoon salt

2 cups grated carrots
-
1/3 cup finely diced dried apricots or 1/3 cup apricot preserves

1/3 cup mini chocolate chips

1/3 cup coconut
-
1/2 cup crushed pineapple, drained

1/2 cup chopped walnuts

3 eggs, slightly beaten

3/4 cup oil
-
2 teaspoons vanilla

Powdered sugar

INSTRUCTIONS |
In a large mixing bowl, sift dry ingredients; add carrots, apricots, chocolate chips, coconut, pineapple, and walnuts. Add eggs, oil, and vanilla; mix all until dry ingredients are moistened. Scoop into paper-lined muffin tins. Bake at 375ยบ for 15-18 minutes. Dust with powdered sugar. |
