Salads -
Chicken Fruit Salad

INGREDIENTS |
- • 4 tangerines or 3 small oranges

• 3 cups cubed, cooked chicken

• Salt and pepper to taste

• 1/2 cup chopped celery
-
• 3 boiled eggs, quartered

• 1/2 cup red or green seedless grapes
-
• 1/2 cup mayonnaise or salad dressing
-
• 1/2 teaspoon dry mustard
-
• 6 lettuce cups

INSTRUCTIONS |
Peel tangerines or oranges; section and dice them over a bowl to catch the juice; reserve juice. Season chicken lightly with salt and pepper. Combine diced citrus, chicken, celery, quartered boiled eggs, and grapes. Cover and chill. Combine mayonnaise, 2 teaspoons reserved tangerine or orange juice, and dry mustard before serving. Lightly toss the chicken-fruit mixture with dressing; serve the salad in lettuce cups. |
