Salads - Marinated Summer Salad



INGREDIENTS
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons water
  • 1/2 teaspoon minced garlic
  • 1 avocado, hulled and coarsely chopped
  • 2 medium tomatoes, coarsely chopped
  • 1 medium sweet pepper, chopped
  • 1 summer squash, chopped
  • 1/2 onion, thinly sliced and halved

INSTRUCTIONS
Mix oil, vinegar, water, and garlic in a small, sealable container; shake well and set aside while chopping ingredients. Combine chopped avocado, tomatoes, peppers, squash, and onion in a large bowl; pour marinade over avocado mixture and toss lightly with a spoon. Serve as a side dish or with corn chips.
