Appetizers - Country Sunshine Avocado Fries



INGREDIENTS
  • Sunflower oil for frying
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon kosher salt
  • Pinch black pepper
  • 1 clove minced garlic
  • 2 large farm-fresh eggs, beaten to blend
  • 11/4 cups panko bread crumbs
  • 2 firm, ripe, medium avocados, pitted, peeled, and sliced into 1/2-inch wedges
  • Fresh lemon juice

INSTRUCTIONS
Preheat oven to 200º. In a medium saucepan, heat 11/2 inches oil until it registers 375º on a deep-fry thermometer. Meanwhile, mix flour with salt, pepper, and garlic in a shallow plate. Put eggs and panko in separate shallow plates. Dip avocado in flour mix, shaking off excess. Dip in egg, then panko to coat. Place on two plates in a single layer. Fry a quarter of avocado slices at a time until deep golden, 30 to 60 seconds. Transfer slices to a plate lined with paper towels. Keep warm in oven while cooking remaining avocados. Sprinkle with salt to taste. Squeeze fresh lemon juice over avocado fries to serve.
